April’s 15-Minute Creamy Chanterelle Chicken Soup

April’s 15-Minute Creamy Chanterelle Chicken Soup

Yeild: Makes 2 servings 

Ingredients

1.5 cups roasted chicken, shredded

2 Tbsp of olive oil or butter

1 large onion, diced (about 1½ cups)

2 or 3 stalks of celery, medium dice, depending on the size of the stalks

3 cloves garlic, minced

5 or 6 chanterelle mushrooms, cleaned and sliced

1 qt water

1 Tbsp Better Than Bouillon (vegetable base)

4 Tbsp just better.® prebiotic fiber

⅓ cup heavy cream (or half-and-half or milk alternative for lighter version )

2 Tbsp fresh parsley, chopped

Salt and pepper to taste 

Directions

Mix the broth base (1 min): In a bowl or measuring cup, whisk in just better.® into 1 quart of water until fully dissolved. Stir in 1 tablespoon of Better Than Bouillon. Set aside.

Sauté aromatics (3–4 min): In a soup pot over medium heat, add olive oil or butter, then onion and celery; cook until they start to soften. Add garlic and chanterelles, sauté another 2–3 minutes until fragrant 

Add broth mixture (5 min): Pour in the prepared fiber-infused broth. Bring to a gentle simmer.

Add chicken (3 min): Stir in the shredded, roasted chicken, then simmer until heated through.

Finish creamy (2 min): Lower the heat; stir in cream and parsley. Taste and season with salt, pepper.

Serve immediately: Enjoy warm with crusty bread
