Turkey:

Baked Turkey Salad + just better.® Prebiotic Tart Cherry Vinaigrette

Ingredients

For the Salad:

2 turkey breasts

1 or 2 Tablespoon avocado oil (depending on the size of your turkey breasts)

Salt and pepper to taste

Your favorite spices (Think garlic, Italian seasonings, rosemary, etc.) 

4 cups of your favorite spring salad mix

1 cup cucumber, thinly sliced

1 cup bell peppers, thinly sliced

1 cup carrots, shredded

1 avocado, cubed

1/4 cup sliced almonds

For the just better.® Prebiotic Tart Cherry Vinaigrette:

1/2 cup tart cherry juice

3 Tablespoons red wine vinegar

2 Tablespoons Dijon mustard

1 to 2 Tablespoons of honey (to taste)

1/2 cup olive oil

4 Tablespoons of just better.® Prebiotic Fiber

Salt and pepper to taste

Directions

Prepare the Turkey:

Preheat your oven to 375°F (190°C).

Brush the turkey breasts with avocado oil and season with salt, pepper, and your favorite spices.

Place the turkey breasts in a shallow baking dish (Optional: Line with parchment paper).

Cover the baking dish with aluminum foil to keep the turkey moist.

Bake for 25-30 minutes or until fully cooked and the internal temperature reaches 165°F (74°C).

Remove the foil for the last 5 minutes of baking to let the turkey brown slightly.

Remove from the oven and let rest for 5 minutes before slicing into thin strips or cubes.

Prepare the Vegetables:

While the turkey is baking, prepare the vegetables by slicing the cucumbers, bell peppers, and avocados and shredding the carrots.

In a large salad bowl, combine the spring salad mix, cucumbers, bell peppers, carrots, avocado, and sliced almonds.

Make the Vinaigrette:

In a small bowl, whisk together the tart cherry juice, red wine vinegar

Add the Dijon mustard and honey.

Gradually add the olive oil while whisking continuously until the vinaigrette is well blended.

Season with salt and pepper to taste.

Assemble the Salad:

Add the diced turkey to the salad bowl with the vegetables.
