Introducing Casey’s Cozy Fall Recipe!

We’re over the moon to share this week’s recipe from Casey, a devoted just better.® Fiber advocate who inspires us daily with her commitment to healthy living goals and creative cooking ideas.  

Casey’s recipe is a reflection of her dedication to making every meal count and is crafted with the same love for wellness that unites us all.

Casey’s Apple Crisp Protein Bowl

Ingredients: 

1 small apple (Casey uses Rocket apples)

1 teaspoon allulose 

1 teaspoon cinnamon (add clove or allspice if desired) 

1 teaspoon vanilla bean paste or vanilla 

A pinch of salt 

1 teaspoon butter 

1 (or 2 😉) Tablespoons just better.® fiber 

¼ Cup Granola of choice 

⅓ Cup of Plain Greek Yogurt or Cottage Cheese 

Instructions

Bring 1 cup of water to a simmer in a saucepan. 

Add apples, cinnamon, allulose, vanilla, and salt. 

Once tender, add butter and just better.® fiber. 

Simmer until the water evaporates, and the sauce reduces. 

Remove from heat. 

Add 1/4 cup of granola. 

Top cottage cheese or (plain Greek) yogurt for a nice protein boost.
