Sun-dried tomatoes bring a pop of tangy flavor and rich texture that complements the earthy mushrooms. The bit of oil they’re packed in adds depth and helps carry all those savory, herby notes through the dish.

Fresh Herbs (Rosemary & Parsley):

Fresh herbs bring color, aroma, and freshness to the table. Rosemary and parsley contribute beneficial plant compounds and add a burst of flavor that lifts the entire dish.

Onion and Garlic:

Chef BFF’s Mushroom & Sun-Dried Tomato Frittata

Chef BFF’s Mushroom & Sun-Dried Tomato Frittata

Yield Serves 4

Ingredients

1 large onion, diced

5 large cremini mushrooms, quartered

1 teaspoon chopped garlic

A handful of greens of your choice

1 heaping tablespoon of sun-dried tomato strips in oil

1 teaspoon fresh rosemary, chopped

1 tablespoon fresh parsley, chopped

Salt and pepper, to taste

Olive oil, enough to coat vegetables

8 eggs

2 tablespoons water  

4 tablespoons just better.® prebiotic fiber

4 ounces shredded or chopped cheese

Directions

1. Preheat the oven to 350°F (175°C)

2. Prepare the vegetables

Dice the onion, quarter the mushrooms, and chop the garlic. Add a handful of greens, sun-dried tomato strips, rosemary, and parsley. Season lightly with salt and pepper.

3. Cook the vegetables

Sauté or roast the veggies until they’re soft. After tossing everything in enough olive oil to coat, place the cast-iron pan with the vegetables into the oven and roast for about 15 minutes.

4. Prepare the egg mixture

In a separate bowl, crack the eggs.

5. Blend just better.® prebiotic fiber with water

Mix two tablespoons of water with four tablespoons of just better.® prebiotic fiber. 

Once combined, whisk the mixture into the eggs until smooth. 

Note: Mixing with water first ensures the fiber blends evenly. It will have a paste-like consistency, and we want that so it will blend into the eggs with ease. 

Chef Tip: Water helps this egg bake turn out more fluffy!

6. Assemble and bake

Remove the cast-iron pan with the roasted vegetables from the oven.

Add the cheese on top of the warm veggies, then pour the egg mixture over. Gently stir to incorporate everything evenly.

Return the pan to the oven and bake for 20–25 minutes, or until the center is set and the top is lightly caramelized.

7. Serve and enjoy!
