Ingredients

 

Chicken Fajitas:

 

2 boneless, skinless chicken breasts cut into strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 onion, sliced

1 tbsp avocado oil

2 tsp chili powder

1 tsp cumin

1 tsp garlic powder

½ tsp smoked paprika

Salt and pepper to taste

Tortillas of your choice (whole wheat, spinach, or corn are great options!) 

Avocado Crema:

2 ripe avocados

1 lime, juiced

2 tbsp Greek yogurt or sour cream

1 tsp garlic powder

4 Tbsp just better.® Prebiotic Fiber

Sea salt to taste

Directions

Prepare the Chicken Fajitas:

Heat the avocado oil in a large skillet over medium-high heat. Add the chicken strips, season with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. 

Sauté until the chicken is cooked through, about 6-8 minutes.

Sauté the Vegetables:

In the same pan, add the sliced bell peppers and onions. Cook until they’re soft and slightly charred, about 5 minutes.

Make the Avocado Crema:

In a bowl, mash the avocados with lime juice, Greek yogurt, garlic powder, and salt. Stir in the just better.® Prebiotic Fiber until thoroughly combined. The crema should be smooth and creamy.

Assemble the Tacos:

Warm your tortillas, then layer on the chicken, sautéed peppers and onions, and a generous dollop of avocado crema.
