Fiber-Rich Chilla (Savory Chickpea Pancakes)

Ingredients: 

1 cup chickpea flour (besan)

1/4 cup just better.® prebiotic fiber

¾ to ½ cup water (adjust as needed)

¼ cup finely chopped onion

¼ cup grated carrot or zucchini

1 small tomato, finely chopped

1 green chili, finely chopped (optional for heat)

¼ teaspoon turmeric

½ teaspoon cumin seeds

¼ teaspoon black pepper

½ teaspoon salt

2 tablespoons chopped cilantro

1 teaspoon grated ginger

Avocado oil (for cooking)

Instructions:

Mix the Batter: In a bowl, whisk together the chickpea flour, just better.® prebiotic fiber, salt, turmeric, cumin, and black pepper. Slowly add water, stirring until a smooth, pourable batter forms.

Add the Veggies: Stir in onion, tomato, carrot (or zucchini), green chili, ginger, and cilantro. Let the batter rest for 10 to 15 minutes—this helps with texture!

Cook the Chilla: Heat a non-stick pan over medium heat and lightly grease with avocado oil. Pour a ladleful of batter into the pan, spreading it into a thin pancake. 

Cook for 2-3 minutes until the edges start lifting, then flip and cook for another 2 minutes until golden and crisp.
