just better.® Watermelon Feta Prebiotic Salad

Ingredients:

4 Cups diced watermelon

1 Cup crumbled feta cheese

½ Cup fresh mint leaves, torn

¼ Cup red onion, thinly sliced

2 Tablespoons extra-virgin olive oil

1 Tablespoon balsamic vinegar

Salt and pepper to taste

4 Tablespoons just better.® prebiotic fiber

Optional: Toss in a handful of fresh organic blueberries and chopped avocado.

Instructions:

In a large bowl, combine watermelon, feta cheese, mint leaves, and red onion. In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, pepper, and just better.® prebiotic fiber. Drizzle the dressing over the watermelon mixture and gently toss to combine. Serve chilled.

Ingredients:

4 Large organic tomatoes, chopped

1 Cucumber, peeled and chopped

1 Red bell pepper, seeded and chopped

1 Small red onion, chopped

4 Cloves garlic, minced

3 Tablespoons extra-virgin olive oil

2 Tablespoons red wine vinegar

Salt and pepper to taste

4 Tablespoons just better.® prebiotic fiber

Optional toppings: chopped cucumber, cherry tomatoes, herbs

Instructions: 

In a blender or food processor, combine tomatoes, cucumber, red bell pepper, red onion, garlic, olive oil, red wine vinegar, salt, pepper, and just better.® prebiotic fiber. Blend until smooth. Chill in the refrigerator for at least 1 hour before serving. Serve with your choice of toppings.

Happy Belly Sesame Noodles 

Ingredients:

8 Ounces soba noodles

3 Tablespoons Brag’s Liquid Aminos

2 Tablespoons toasted sesame oil

2 Tablespoons rice vinegar

1 Tablespoon honey or maple syrup

1 Tablespoon grated ginger

2 Cloves garlic, minced

2 Green onions, thinly sliced

Any other veggies you feel like throwing in! =) 

¼ Cup chopped peanuts

4 Tablespoons just better.® prebiotic fiber

Optional toppings: sliced cucumber, shredded carrots, cilantro

Instructions:

Cook the noodles according to the package instructions. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, ginger, garlic, and just better.® prebiotic fiber. Drain the cooked noodles and rinse under cold water. Toss the noodles with the sauce until well coated. Refrigerate for at least 30 minutes before serving. Add green onions, peanuts, and any optional toppings, then toss again.
