Ingredients:
3 ripe bananas, mashed
1/2 cup cottage cheese
1/4 cup just better.® prebiotic fiber
1/3 cup honey or maple syrup
2 eggs
1 tsp vanilla extract
1 3/4 cups almond flour
1 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/3 cup walnuts or chocolate chips (optional)
Instructions:
Preheat your oven to 350°F and grease a loaf pan.
In a large bowl, mash the bananas and mix in the cottage cheese, honey (or maple syrup), eggs, vanilla extract, and just better.® prebiotic fiber, stirring until fully combined.
In a separate bowl, whisk together the almond flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in walnuts or chocolate chips if using.
