just better.® Veggie Scramble

Ingredients:

4 Tablespoons just better.® prebiotic fiber

1 Tablespoon avocado oil

2 Cups of organic spinach, washed and rolled, and chopped into strips

1 Cup mushrooms, sliced 

5 Cherry tomatoes, halved

1 Red bell pepper, diced

1 Yellow bell pepper, diced

1 Green bell pepper, diced 

¼ Cup green onions, chopped (for garnish)

Salt and pepper to taste

For Egg Scramble:

8 Large eggs

Salt and pepper to taste

For Vegan Tofu Scramble:

1 (14-ounce) block of firm tofu, drained and crumbled

2 Tablespoons nutritional yeast

½ Teaspoon turmeric

Black pepper to taste

Directions:

Heat avocado oil in a large non-stick skillet over medium heat.

Add bell peppers to the skillet. Sauté for 5-7 minutes or until tender.

Add mushrooms and cherry tomatoes until they soften slightly. 

Add spinach and cover pan until spinach starts wilting. Stir occasionally. 

If making an egg scramble, crack the eggs into a bowl, add just better.® prebiotic fiber, season with salt and pepper, and whisk until well combined. 

Pour the beaten eggs over the sautéed vegetables and cook, stirring occasionally, until the eggs are cooked to your desired consistency.

If making a vegan tofu scramble, add the crumbled tofu to the skillet along with nutritional yeast, turmeric, salt, pepper, and just better.® prebiotic fiber. Stir well to combine and cook for 5-7 minutes, allowing the flavors to meld together. (just better.® Fiber dissolves in the food you already eat every day!)

Remove from heat and garnish with chopped green onions.
