6 large organic carrots, peeled and chopped

1 organic onion, diced

3 cloves organic garlic, minced

1-inch piece of fresh ginger, grated

1 teaspoon ground turmeric

6 Tablespoons just better.® Prebiotic Fiber

4 cups organic vegetable broth

1 can (400ml) coconut milk

2 tablespoons avocado oil

Salt and pepper to taste

Fresh carrot greens or cilantro for garnish (optional) 


In a large pot, heat avocado oil over medium heat. Add diced onions and minced garlic, sautéing until softened and fragrant.

Stir in grated ginger and ground turmeric, allowing the spices to bloom for a minute.

Add chopped carrots to the pot, seasoning with salt and pepper. 

Cook for an additional 5 minutes, allowing the flavors to meld.

Pour in the vegetable broth, bringing the mixture to a gentle boil. 

Reduce heat and simmer until the carrots are tender.
