Who says you can’t have your cookie and eat it too—especially when it’s designed with your digestive health in mind? Introducing our Happy Trail Cookies with just better.® Prebiotic Fiber—a fun cookie that marries taste and tummy-friendly ingredients. 

Inspired by our latest WTFiber FAQs Series: Digestive Health Edition, these cookies are thoughtfully crafted with ingredients that your gut will love. They offer a delicious way to support your digestive health; plus, they’re so tasty that no one will guess they’re packed with fiber!

Our Happy Trail Cookies are loaded with carefully selected ingredients that are not only flavorful but also gentle on sensitive stomachs. The base of these cookies is made from rolled oats and oat flour, both of which are excellent sources of soluble fiber.

Soluble fiber is known for its ability to form a gel-like substance in the gut, which helps slow digestion and is easier on the digestive system. This makes these cookies a great option for those with conditions like IBS.

We've also added just better.® Prebiotic Fiber, which plays a crucial role in promoting gut health. This fiber helps feed the beneficial bacteria in your gut, supporting a healthy microbiome. 

For those with digestive health challenges, maintaining a balanced gut flora is key to managing symptoms and improving overall health.

To keep things sweet and satisfying, we’ve included dried cranberries and mini dark chocolate chips. These add a burst of flavor without overwhelming your stomach. We also used avocado oil, a heart-healthy fat that’s easy to digest, and chopped walnuts for a crunchy texture and a boost of omega-3 fatty acids. 

Our just better.® Happy Trail Cookies deliver a dose of fiber and healthy fats. They are the perfect way to indulge in something sweet without compromise, offering a delicious treat that's also kind to your gut.

Happy Trail Cookies (a Low-FODMAP Treat!)

Yield: Approximately 20 cookies

Ingredients:

1 ½ Cups rolled oats 

1 Cup oat flour 

½ Cup just better.® Prebiotic Fiber 

½ teaspoon baking soda

¼ teaspoon salt

¼ Cup of sugar

½ Cup of avocado oil

1 large egg

1 teaspoon vanilla extract

½ cup dried cranberries 

½ cup mini dark chocolate chips (ensure they are dairy-free and low in FODMAPs)

½ cup chopped walnuts 

2 Tablespoons of sesame seeds 

Instructions:

Preheat the Oven: Preheat your oven to 350°F. Line a baking sheet with parchment paper.

Mix the Dry Ingredients: In a large bowl, combine the rolled oats, oat flour, just better.® Prebiotic Fiber, baking soda, and salt. Stir until evenly mixed.

Cream the Ingredients: In another large bowl, cream together the avocado oil and sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.

Fold in the Add-Ins: Gently fold in the dried cranberries, mini dark chocolate chips, sesame seeds, and chopped walnuts, making sure the ingredients are evenly distributed throughout the dough.

Portion the Dough: Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers may still be slightly soft, but they will firm up as the cookies cool.

Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
