Herb Garden Lemon Chicken

Ingredients:

4 boneless, skinless chicken breasts

1/4 cup freshly squeezed lemon juice

3 Tablespoons avocado oil

2 Tablespoons honey or maple syrup

2 Tablespoons fresh rosemary, finely chopped

2 Tablespoons fresh thyme, finely chopped

1 Tablespoon fresh oregano, finely chopped

2 cloves garlic, minced

Salt and pepper to taste (optional)

1/4 cup chicken broth or water

Directions:

Marinate the Chicken: In a large bowl, mix 2 tablespoons of avocado oil, half the lemon juice, 1 tablespoon of rosemary, 1 tablespoon of thyme, and 1/2 tablespoon of oregano. 

Add the chicken breasts, ensuring they are well-coated. 

Cover and refrigerate for at least 30 minutes or up to 2 hours for a more intense flavor.

Remove the chicken from the marinade and cook on the grill or in the oven until fully cooked, about 6-8 minutes per side, depending on thickness.

Simmer the Glaze: While the chicken is cooking, heat the glaze mixture over medium heat. Bring it to a gentle simmer, stirring occasionally, until it thickens slightly and becomes a glossy glaze.
