Hide & Go Eat Muffins
Ingredients:
1 cup whole-grain flour
1/2 cup rolled oats
1/4 cup just better.® Prebiotic Fiber
1/4 cup protein powder (vanilla or unflavored)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup grated carrots
1/2 cup grated zucchini (squeezed to remove excess moisture)
1/2 cup blueberries (fresh or frozen)
1/3 cup honey or maple syrup
1/2 cup unsweetened applesauce
1/4 cup avocado oil
1/3 cup milk or unsweetened nut milk
2 large eggs
1 teaspoon vanilla extract
Instructions:
Preheat and Prep:
Preheat your oven to 350°F (175°C).
Line a muffin tin with paper liners or lightly grease it.
Mix Dry Ingredients: In a large bowl, whisk together the whole grain flour, rolled oats, just better.® Prebiotic Fiber, protein powder, baking powder, baking soda, salt, cinnamon, and nutmeg.
Mix Wet Ingredients: In another bowl, combine the honey or maple syrup, applesauce, oil, milk, eggs, and vanilla extract. Mix until well combined.
Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
Add Veggies and Blueberries: Gently fold in the grated carrots, grated zucchini, and blueberries until evenly distributed throughout the batter.
Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Cool: Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
