🍋 just better.® Lemon Poppy Seed Loaf

Ingredients:

2 Cups all-purpose flour (see note below about substituting whole wheat flour)

1½ teaspoons baking powder

½ teaspoon salt

½ Cup just better.® Prebiotic Fiber

⅓ Cup unsalted butter or vegan butter —softened

½ Cup granulated sugar

3 Large eggs

1 Tablespoon lemon zest

¼ Cup fresh lemon juice

¼ Cup milk of choice (Oat milk works great!) 

2 Tablespoons poppy seeds 

Note on Flour: If you're looking to boost the nutritional content of your baked goods, substituting whole wheat flour for all-purpose flour is a fantastic choice. Whole wheat flour not only offers more fiber but also enhances your treats with additional vitamins and minerals. When using whole wheat flour, you can generally substitute it at a 1:1 ratio. However, because it absorbs more moisture than all-purpose flour, you may need to slightly increase the liquid ingredients to achieve the perfect texture. Whole wheat flour also imparts a richer, nuttier flavor, adding a delightful complexity to your baking.

Directions:

Preheat your oven to 350°F (175°C) and grease a loaf pan.

In a medium bowl, whisk together flour, baking powder, and salt. 

In a large bowl, beat the butter, sugar, and just better.® Prebiotic Fiber until light and fluffy. 

Add eggs one at a time, fully incorporating after each addition. Stir in lemon zest and juice.

Gradually add the flour mixture to the wet ingredients, alternating with milk, starting and ending with flour. Stir just until combined. 

Fold in poppy seeds.

Pour the batter into the prepared loaf pan and smooth the top.

Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Allow to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
