These Matcha-Moringa Almond Butter Cookies are a delicious, nutrient-packed treat that blends the earthy flavors of matcha and moringa with the creamy richness of almond butter.
I love how these cookies offer a perfect balance of natural sweetness, protein, and fiber, making them a great option for a healthy snack or an energy boost throughout the day.

Matcha-Moringa Almond Butter Cookies
with just better.® prebiotic fiber
Ingredients:
1 cup almond butter (or peanut butter)
1/4 cup coconut flour (or gluten-free flour)
½ Cup just better.® prebiotic fiber
1 tbsp matcha powder
1 tbsp moringa powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup honey or maple syrup (or to taste)
1 large egg
1 tsp vanilla extract
1/4 cup water
1/4 cup dark chocolate chips (optional, for a chocolatey twist)
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, mix together the almond butter, coconut flour, just better.® prebiotic fiber, matcha powder, moringa powder, baking soda, water, and salt until well combined.
Add in the egg, honey, and vanilla extract, and stir until the dough comes together. If you like, fold in the chocolate chips.
Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Gently press each cookie down with the back of a spoon or your fingers to flatten slightly.
Bake for 8-10 minutes, or until the edges are golden and the cookies have set.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
