Ingredients List:

1 1/2 cups rolled oats

1 cup oat flour

1/3 cup unsweetened organic peanut butter

1/2 cup dark chocolate chips

1/2 cup coconut oil or unsalted butter, melted

1/4 cup brown sugar, honey, or maple syrup

1/4 cup just better.® Prebiotic Fiber

2 eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

A pinch of salt

Note: If you choose to use maple syrup or honey, the cookies may be softer and chewier due to the added moisture. To maintain the desired texture, add 2 to 3 extra tablespoons of oat flour or rolled oats to balance the moisture. 

Note: To keep this recipe gluten-free, make sure to use certified gluten-free oat flour and rolled oats. While oats are naturally gluten-free, cross-contamination can occur during processing, so it's important to choose certified gluten-free options.

Directions:

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream the Butter and Sugars: In a large bowl, beat the softened butter with the brown sugar and your chosen sweetener (honey, maple syrup, or sugar) until light and fluffy.

Add Wet Ingredients: Beat the egg and vanilla extract until well combined. Then, mix in the peanut butter. 

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, oat flour, just better.® Prebiotic Fiber, baking soda, and salt.

Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in the chocolate chips.

Form the Cookies: Scoop the cookie dough onto the prepared baking sheet, using 1 to 2 tablespoons of dough per cookie. Flatten slightly with the back of a spoon or your hands.

Bake: Bake for 10-12 minutes or until the edges are lightly golden. 

Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
