Prebiotic Black Bean Chili 

Ingredients

2 Tablespoons avocado oil

1 large onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced 

2 medium carrots thinly sliced

2 cups cooked black beans (or 2 cans, drained and rinsed)

1 can (15 oz) diced tomatoes

1 cup vegetable broth

2 Tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 Tablespoon chili powder

½ teaspoon cayenne pepper (optional)

1 teaspoon salt, or to taste

½ cup just better.® prebiotic fiber

Directions

Heat avocado oil in a large skillet over medium heat. Add diced onion and garlic, and sauté until fragrant and softened, about 5 minutes.

Add the bell peppers and carrots, stirring occasionally until they soften.

Transfer the sautéed vegetables to your slow cooker. Add the black beans, diced tomatoes, vegetable broth, just better.® prebiotic fiber, and tomato paste.

Stir in cumin, smoked paprika, chili powder, cayenne pepper (if using), and salt. Mix well.

Cook on low heat for 6–8 hours or on high for 3–4 hours—until the flavors meld beautifully.
