Prebiotic Chocolate Peanut Butter Balls

Peanut Ball Ingredients:

1/3 cup unsweetened apple sauce

1 1/4 cups peanut butter powder

1/4 cup just better.® prebiotic fiber

Chocolate Coating Ingredients:

1/2 cup dark chocolate chips

Approximately one tablespoon of coconut oil

Directions:

Prepare the Peanut Balls: In a mixing bowl, combine the unsweetened apple sauce, peanut butter powder, and just better.® prebiotic fiber. Mix well until the ingredients form a thick, moldable dough. If the mixture feels too dry, add a small amount of applesauce or water, one teaspoon at a time, until the desired consistency is reached.

Shape the Balls: Scoop out small portions of the dough (about one tablespoon each) and roll them into bite-sized balls. Place the balls on a parchment-lined tray and put them into the refrigerator or freezer.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second increments, stirring in between, until the chocolate is fully melted and smooth.

Coat the Peanut Balls: Using a fork or a skewer, dip each peanut butter ball into the melted chocolate, ensuring it’s fully coated. Return the coated balls to the parchment-lined tray.

Chill: Refrigerate the chocolate-coated balls for 20–30 minutes or until the chocolate has hardened.

Optional Variations: Before the chocolate sets, roll the coated balls in finely chopped nuts, hemp hearts, or unsweetened coconut flakes for added texture and flavor.
