Cauliflower and Potato Prebiotic Herb Latkes 

Ingredients

2 cups grated cauliflower (squeeze out excess water)

2 cups grated potatoes (russet or Yukon gold)

1 small onion, finely grated

2 cloves garlic, minced

¼ cup just better.® prebiotic fiber

2 large eggs, beaten

⅓ cup oat flour or whole-wheat flour

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

Salt & Pepper to taste

Avocado oil (for frying)

Directions

Prep the Veggies: In a large bowl, combine the grated cauliflower and potatoes. Use a clean kitchen towel to squeeze out as much liquid as possible. 

Prepare the Fiber Mixture: In a small bowl, beat the eggs and stir in the just better.® prebiotic fiber until fully dissolved. Set aside. 

Combine the Ingredients: In a large bowl, mix the grated onion, minced garlic, oat flour, dill, parsley, salt, and pepper. Pour in the egg and fiber mixture and stir until evenly combined. 

Form the Latkes: Scoop about 2 tablespoons of the mixture into your hands and form into small, flat patties. Approximately 12 to 15 latkes. 

Heat the Oil: Heat a thin layer of avocado oil in a large skillet over medium heat.

Fry to Perfection: Fry the latkes in batches, about 2–3 minutes per side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Keep Warm: Place the finished latkes on a baking sheet in a 200°F oven to stay warm while cooking the remaining batches.
