1 Cup pumpkin puree (not pumpkin pie filling)

1 Cup brown sugar, packed

1/2 Cup melted butter

2 Eggs

1 Tablespoon vanilla extract

1 ½ Cups all-purpose flour

¼ Cup just better.® Prebiotic Fiber

1 teaspoon baking soda

1/2 teaspoon salt

1 Tablespoon pumpkin spice blend

Optional: 1/2 Cup dark chocolate chips or chopped walnuts for added crunch 

Directions: 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or a silicone baking mat.

Mix the Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, brown sugar, melted butter, egg, and vanilla extract until smooth.
