Berry Good Quinoa Breakfast Bake
Ingredients:
1 cup quinoa, rinsed and drained
1 cup organic blueberries (fresh or frozen)
½ cup organic raspberries (fresh or frozen)
½ cup blackberries (fresh or frozen)
2 Tablespoons of chia seeds
1 Tablespoon cinnamon
6 tablespoons of just better.® Prebiotic Fiber
2 cups unsweetened almond milk (or milk of your choice)
2 Tablespoons pure maple syrup
2 teaspoons vanilla extract
Directions:
Preheat the oven to 375°F
In a large mixing bowl, combine the rinsed and drained quinoa, blueberries, raspberries, blackberries, chia seeds, cinnamon,
Whisk the almond milk, maple syrup, vanilla extract, and just better.® Prebiotic Fiber in a separate bowl. (Our fiber is 100% dissolvable and flavorless!)
Pour the wet mixture over the dry ingredients and stir to combine thoroughly.
Transfer the mixture to a greased baking dish.
