just better.® Recipe of the Week: Zesty Avo-Jalapeño Ranch

We’ve got a pep in our step this week and thought we needed to spice things up for summer! We love a flavorful ranch dressing with a healthy, fiber-filled twist. This ranch has it all, even a little kick! 

And by the way, our just better.® Zesty Avo-Jalapeño Ranch recipe isn’t just for salads! 

  • Use it for a dip
  • Give your chicken a coat before popping it in the oven or air fryer 
  • Use it as a marinade
  • Add it to soups & sauces
  • Add it to mac & cheese
  • Create a whole-grain pasta (+ fresh veggies) salad around this dressing!

We made this one vegan, but this is great non-vegan as well! It’s all up to YOU! ;-) 

So, without further ado… ***Yee-haws coming from the crowd!*** 

Zesty Avo-Jalapeño Ranch Dressing 

Ingredients:

1 Ripe Avocado, peeled and pitted

1 Jalapeño Pepper, seeded and chopped

1/2 Cup Greek Yogurt (Choose your favorite dairy or non-dairy brand!)

4 to 6 Tablespoons just better.® fiber (100% dissolvable)

2 Tablespoons Mayonnaise (We used a Vegan Mayo found in the produce section of our local market.)

1 Tablespoon Fresh Lime Juice

2 Clove Garlic, minced

1/2 Teaspoon Onion Powder (or to taste)

1/2 Teaspoon Dried Dill

1/2 Teaspoon Dried Parsley

1/2 Teaspoon Sea Salt (or to taste)

1/4 Teaspoon Coarse Black Pepper

Filtered Water (as needed for consistency)

Instructions: 

In a blender, hand mixer, or food processor, combine the avocado, jalapeno pepper, Greek yogurt, mayo, lime juice, garlic, onion powder, dried dill, dried parsley, salt, black pepper, and just better.® fiber.

Blend the ingredients until smooth and creamy, adding water as needed to achieve your desired dressing consistency. 

Taste the dressing and adjust the seasoning if needed, adding more salt, pepper, or lime juice as desired. (We are extra zesty and added a little more diced jalapeño peppers! We regret nothing!)

Transfer the dressing to a jar or container and refrigerate for at least 30 minutes to allow the flavors to meld together. 

Serve your Jalapeño Avocado Ranch Dressing on anything your heart desires!

Storage: 

When stored properly in an airtight container, this recipe will typically last in the refrigerator for about 3 to 5 days. 

Please note that the freshness and quality of the dressing may vary depending on the freshness of the ingredients, particularly the avocado and dairy (or non-dairy) products used. 

It's always a good practice to check for any signs of spoilage, such as off odors or changes in texture or color, before consuming. If you notice any of these signs, it's best to discard the dressing. Then make more! =)
