These vegetarian tacos are a scrumptious blend of roasted sweet potato chunks, protein-packed black beans, creamy avocado, and a dollop of Greek yogurt infused with just better.® Prebiotic Fiber. Get ready to satisfy your taste buds and boost your gut health all in one mouthful! 

Sweet Potato and Black Bean Tacos with
Spicy Prebiotic Greek Yogurt Sauce

Ingredients List:

2 large sweet potatoes, peeled and diced into chunks

2 Tablespoons avocado oil 

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed 

4 Tablespoons of just better.® Prebiotic Fiber 

1 ripe avocado, sliced

8 small tortillas (corn or whole wheat) 

Spicy Prebiotic Greek Yogurt Sauce:

1 cup Greek yogurt

4 Tablespoons just better.® Prebiotic Fiber

1 clove garlic, minced

1 Tablespoon fresh lime or lemon juice

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust for your preferred level of spiciness)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional) 

Directions:

Preheat your oven to 400°F (200°C).

In a large mixing bowl, combine the diced sweet potatoes, avocado oil, just better.® Prebiotic Fiber, ground cumin, paprika, salt, and pepper. Toss the sweet potatoes until they are evenly coated with the spice mixture. 

Spread the seasoned sweet potatoes in a single layer on a baking sheet and roast for about 20-25 minutes or until they are tender and slightly crispy.

While the sweet potatoes are roasting, prepare the Spicy Prebiotic Greek Yogurt Sauce. 

In a mixing bowl, combine the Greek yogurt, just better.® Prebiotic Fiber, minced garlic, fresh lemon juice, cumin, paprika, and cayenne pepper. 

Mix well until all ingredients are fully incorporated. 

Season the sauce with salt and pepper to taste. If you love fresh herbs, chop some cilantro or parsley and sprinkle it over the sauce for extra flavor. 

Chill the sauce in the refrigerator for about 30 minutes to let the flavors meld.

Heat black beans in a saucepan

Once the sweet potatoes are ready, it's time to assemble your tacos. 

Warm the tortillas according to your preference.

On each tortilla, place a generous scoop of roasted sweet potatoes, a spoonful of black beans, a few avocado slices, and a dollop of the Spicy Prebiotic Greek Yogurt Sauce.

Garnish with fresh cilantro or parsley, if desired.
