Sweet Potato Dark Chocolate Chip Cookies 


Yield: Approximately 12 Cookies

1 Cup cooked sweet potato 

1 ½ Ripe organic banana 

½ Cup of just better.® Prebiotic Fiber 

½ Cup of nut butter (Almond butter works great!)

2 tsp organic cinnamon

1 Cup rolled oats 

¼ Cup hemp hearts

⅔ Cup 70% dark chocolate chips 


Preheat oven to 400°F

In a mixing bowl, combine the sweet potato, mashed banana, nut butter, just better.® Prebiotic Fiber and cinnamon.

Stir in oats.

Fold in chocolate chips.

Use a tablespoon to scoop the cookies onto a lined baking sheet, then flatten the cookie with the back of a spoon or fork

Bake at 400­° for 11 to 14 minutes 

Enjoy warm or room temperature. Store in an airtight container.
