Cucumbers, carrots, bell peppers, snap peas, cabbage, radishes, summer squash, broccoli, or whatever fresh vegetables caught your eye can go right into the bowl. Soba Noodles

Soba noodles are traditionally made with buckwheat flour and have a slightly earthy, nutty flavor that pairs beautifully with sesame dressing. Some varieties are made entirely with buckwheat, while others combine buckwheat and wheat flour, so check the ingredient list if you have specific dietary needs.

Their tender texture makes them especially well suited for chilled noodle salads. Rinsing the cooked noodles thoroughly in cold water quickly cools them and removes excess starch, helping them stay separate when they meet the dressing. 

A Colorful Mix of Vegetables

This recipe calls for two cups of sliced or shredded vegetables, and the combination is completely up to you. Aim for a variety of colors and textures to make every forkful interesting.

Happy Belly Sesame Noodles

Yield: 4 servings

Ingredients

8 ounces soba noodles

3 tablespoons Bragg Liquid Aminos

2 tablespoons toasted sesame oil

2 tablespoons rice vinegar

1 tablespoon honey or maple syrup (or 3 just better.® allulose stick packs)

1 tablespoon freshly grated ginger

2 cloves garlic, minced

4 tablespoons just better.® prebiotic fiber

2 green onions, thinly sliced

¼ cup chopped peanuts

2 cups sliced or shredded vegetables, such as cucumber, carrots, bell pepper, snap peas, or cabbage

Optional: Fresh cilantro (We see you, soapy tasters!) 

Instructions

Cook the soba noodles according to the package instructions.

While the noodles cook, whisk together the liquid aminos, sesame oil, rice vinegar, honey or maple syrup, ginger, garlic, and just better.® prebiotic fiber in a large bowl.

Drain the noodles and transfer them to a bowl of cold water. Gently swish the noodles until completely cooled, then drain thoroughly.

Add the cooled noodles to the dressing and toss until evenly coated.

Add the green onions, peanuts, vegetables, and cilantro, if using. Toss again to combine.

Refrigerate for at least 30 minutes to let the flavors develop.

Toss once more before serving chilled.

Storage Tips

Store leftover noodles in an airtight container in the refrigerator for up to three days. Give everything a good toss before serving to redistribute the dressing.

The noodles will continue absorbing the dressing as they rest. If they need a little refresh, add a small splash of rice vinegar or liquid aminos and toss well. You can also add a handful of freshly sliced vegetables or an extra sprinkle of chopped peanuts just before serving.
