There’s something about a pot of butternut squash soup on a chilly evening that makes home feel a little cozier. Roast the squash until it’s tender, then blend it with onion, garlic, and thyme for a smooth, savory soup you’ll look forward to warming up again.

And here’s the fun part: with a few toppings in the fridge, you can make a big batch and enjoy a different bowl of soup each night. One night might call for something creamy and crunchy; another, a little spice. Same pot of soup, plenty of ways to enjoy it.

Ingredient Highlight

Butternut squash gets its beautiful orange color from beta-carotene. Your body turns some of that beta-carotene into vitamin A, a nutrient that supports healthy vision and immune function.

Serves: 4

Ingredients

1 medium butternut squash, about 2½ pounds

2 tablespoons avocado oil, divided

1 small yellow onion, diced

2 cloves garlic, minced

3 cups low-sodium vegetable broth, plus more as needed

½ teaspoon dried thyme

⅓ cup just better.® prebiotic fiber

Sea salt and black pepper, to taste

Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. Cut the squash in half lengthwise and scoop out the seeds. Brush the cut sides with 1 tablespoon avocado oil, then place the halves cut-side down on the baking sheet.

3. Roast for 40–50 minutes, until the squash is tender when pierced with a fork. Let it cool enough to handle, then scoop the flesh from the skin.

4. Warm the remaining tablespoon of avocado oil in a large pot over medium heat. Add the onion and cook for 4–5 minutes, until softened. Stir in the garlic and thyme and cook for another minute.

5. Add the roasted squash, vegetable broth, and just better.® prebiotic fiber. Bring to a gentle simmer and cook for 5 minutes.

6. Carefully blend the soup until smooth using an immersion blender, or blend it in batches in a countertop blender. Add a little more broth if you prefer a thinner soup, then season with sea salt and black pepper. 

7. Ladle into bowls and add your favorite toppings.

Make It Your Own

For a little crunch: Sprinkle on pepitas and add a spoonful of crème fraîche. It’s a lovely combination with roasted squash.

For a lively spoonful: Add a dollop of salsa and sour cream. Choose your favorite salsa and make it as mild or spicy as you like.

For a fresh finish: Top with chopped basil, thyme, or microgreens, then drizzle with olive oil.

Storage Tips

Let leftover soup cool before transferring it to an airtight container. Refrigerate for up to 4 days, or freeze for up to 2 months.

Reheat on the stovetop or in the microwave, stirring occasionally. Add a splash of vegetable broth or water if the soup has thickened. Keep toppings separate until you’re ready to serve.
