A Word on Flour

Selecting the right flour is key to achieving the perfect balance of taste and health. For this week’s recipe, we have two excellent flour options to consider: 

Whole Wheat Flour: This choice provides the wholesome goodness of fiber and more nutrients than all-purpose flour. Opting for whole wheat flour infuses the pancakes with a nuttier flavor and a heartier texture, complementing the matcha's depth.

Almond Flour: Almond flour is ideal for those preferring a gluten-free option. It's rich in protein and low in carbohydrates, contributing to a pancake that’s both light and fluffy. The rich, nutty flavor of almond flour pairs wonderfully with the unique taste of matcha, making each bite a delightful experience.

Fiber-Rich Matcha Pancakes 

10 to 12 Pancakes

Ingredients:

1 cup whole wheat flour or almond flour

½ Cup just better.® Prebiotic Fiber 

2 Tablespoons matcha green tea powder

2 Tablespoons sugar 

1 teaspoon baking powder (ensure gluten-free if using almond flour)

1/2 teaspoon baking soda

1/4 teaspoon sea salt

1 Cup buttermilk (or a dairy-free alternative)

1 Large egg (or a flax egg for a vegan option)

2 Tablespoons unsalted butter, melted (or a vegan butter alternative)

1 teaspoon vanilla extract 

Directions:

In a large bowl, whisk together flour, just better.® Prebiotic Fiber, matcha powder, sugar, baking powder, baking soda, and sea salt.

In another bowl, beat the buttermilk, egg, melted butter, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined; the batter should be slightly lumpy.

Heat a non-stick pan over medium heat and lightly grease it.

Pour 1/4 cup of batter for each pancake onto the pan. Cook until bubbles form on the surface, then flip and cook until golden brown.

Serve hot with your choice of toppings.

A drizzle of honey or pure maple syrup
